About New Norcia Bakeries
New Norcia, founded in 1846 by Dom Rosendo Salvado, is Australia’s only monastic town. Home to 16 monks who live a traditional life of prayer and reflection, the community is known for its beautiful Spanish-style architecture. The town is listed on the National Estate, and 27 of its buildings are protected by the National Trust. In 1993, New Norcia Bakeries began using the monastery’s original wood-fired oven—installed back in 1886—to bake authentic artisan breads. These breads, with their chewy golden crust and slightly smoky, toasted wheat flavor, quickly earned a reputation for being some of the best sourdoughs in the world.
