Here’s a more natural, conversational version of that business description: Yves Simard didn’t have any experience in baking, but he knew exactly where to look for it — all the way in France, 5,000 kilometres away. Taking a chance, he reached out to some of the best artisan bakers in the country, and they all agreed to meet with him. It was in a small café on rue Monge in Paris, in the quiet moments between batches of fresh bread, that Yves shared his vision with Dominique Saidron.
