About The Restaurant at Waterkloof
Back in 1993, Paul Boutinot set out on a mission to find the perfect vineyard site—somewhere that could produce truly exceptional wines with a strong sense of place. The traditional, well-known regions like the Côte d’Or, Chablis, Pauillac, and Barolo were either out of reach or simply too exclusive. So, he decided to discover a new classic. After a decade of searching, he finally found a small, south-facing patch on the slopes of the Schapenberg, overlooking False Bay in the Cape. When he was led up a steep ravine that opened into a hidden natural amphitheater, everything clicked—his experience and intuition told him, “This is it.” That’s how Waterkloof came to be, and that’s where the hard work began.
