Every great story has a beginning, and ours starts with Trevor Bird. While competing on Season 2 of Top Chef Canada during the popular “Restaurant Wars” episode, Trevor came up with the name for the team’s farm-to-table restaurant concept: FABLE. That’s where the vision first took shape. When he returned to Vancouver, Trevor began bringing that vision to life—a restaurant that highlights his culinary skills and helps define Canadian cuisine by using local ingredients and serving up bold flavors in a relaxed, welcoming atmosphere.
