About The Bailey Pub and Brasserie
Donal’s vision for The Bailey is to create a modern Irish restaurant and bar that celebrates the exciting culinary scene Ireland is known for today. Irish chefs have traveled the world, gathering knowledge and experience, and are now bringing that expertise back home to open acclaimed restaurants. As a native of Dublin, Donal chose New York City as his home to showcase his skills as an Irish-born chef. He blends contemporary touches with traditional Irish dishes while also crafting innovative new flavors inspired by today’s global influences. The menu features classic favorites like “Smokies” — smoked haddock with crème fraîche, scallions, cherry tomatoes, and Dubliner cheddar — alongside dishes like a lamb duo with beer-braised shoulder, grilled top loin, and barley risotto. For dessert, you’ll find comforting options such as sticky toffee pudding, pavlova, and chocolate sherry trifle. In addition, Chef Crosbie bakes traditional Irish brown bread and Guinness-treacle bread daily, following his mother’s cherished recipes. Donal’s passion for food started in his childhood, cooking and baking alongside his mother in their Dublin home. At 14, he took a part-time job at a local eatery, which fueled his love for cooking. This early experience led him to pursue a culinary degree in college, including internships in kitchens across Dublin that helped shape his culinary style.
